With dairy & egg allergies, how would I do in New Orleans, with all the seafood?

I'm heading to Louisiana for the first time soon, I live in Canada. I'm a bit worried because when I go to restaurants, I don't have many options open to me because of my allergies; except fish (because they usually contain no dairy). Thankfully, I love seafood. But is it done differently in Louisiana? I've never been any where near the southern part of America, and I'm worried that most the food I'll get in the restaurant would have milk or eggs in it. Please help me out here!
